Day 12 & 13 of 120 & Cleaner Chess Pie

What a weekend! Between birthday dinners, weddings, our car puking out, and everything in between I did not take the time to blog for days 12 and 13. Day 12’s scheduled workout was Pump and Burn and Day 13 was a rest day. Granted I think for my rest day I got plenty of cardio in. Gotta love the dance floor.

My food intake was not so great. On Friday when my DH and I went to dinner for his birthday I ordered what I thought would be the cleanest thing on the menu. To my surprise the only thing I should have eaten was the side salad. EVERYTHING was processed. The meal that I ordered didn’t even come out, because they gave me the wrong meal. It happens, I understand. I was kind of wondering why anyone works in their kitchen if no one cooks anything. So I ended up eating instant potatoes and white bread.
Saturday I ate a slice of pizza at lunch leftover from when my friend watched the kids friday. Because I was in a hurry and didn’t want to take the extra 5 minutes to make something. Really should have made a better choice there. At the wedding I had one fried chicken drumstick, peeled off the skin but still. It was fried and also some dressing and a small slice of cake. I had tons of veggies though. And let’s not get started with my beer consumption. How much beer did I drink? I don’t know. So yep, I totally sucked at making good choices this weekend. Do I regret it? YES! Am I going to beat myself up or punish myself for it? NO! Just going to hop back on the wagon and chug along.

So I never took a picture of the Cleaned Up (not 100% clean) Chess Pie I made with my DD. I will at least get the recipe out there and use a generic picture of some to kind of give you an idea what it looks like.

2 Large Eggs, beaten
(1) 5 Ounce Can of Organic Fat Free Evaporated Milk
1 Cup Stevia in the raw
1/4 Cup Brown Sugar
1/4 Cup Unsweetened Cocoa Powder
1/4 Cup Organic Butter, melted
2 Tablespoons Cornmeal
1 Teaspoon Pure Vanilla Extract
2 Cups Unbleached White Wheat Flour
1 Cup organic Butter, very cold
6-8 Tablespoons of Ice Water
2 Teaspoons Stevia in the Raw
1/2 Teaspoon Salt

1. Crust: In a food processor add the flour, Stevia and salt and mix it well. Cut the butter into pea sized pieces and add to flour mixture.  Mix until it is crumbly. There may still be little chunks of butter and that is okay.

2. Add water one tablespoon at a time then pulse. Do this until your dough is still crumbly but can hold together if you squeeze a little bit in your hand.
3. Take your dough and with as little handling as possible ball it up and then roll it out  to fit your pie pan. After it is in your pan cover your edges with foil and pop into the fridge.

1. Filling: mix together the Stevia, brown sugar, corn meal and cocoa powder. Add in the eggs and then mix until it is all completely mixed together. Then add in your evaporated mils, butter and vanilla.
2. Pour filling into your pie crust. It will be very runny and that is okay! Be sure your foil edges are not touching the filling!!
3. Place into your preheated oven and bake for 45 to 55 minutes. Your pie will rise and then fall and crack a little on top as it cool. That is normal and just what Chess Pie does.

Clean Eating Pumpkin Apple Oatmeal Bake / Food Scale

Today my DH bought me a new kitchen scale. After weighing my dinner portions I figured out that my guessing on how much to eat has been way off.  Not that I am eating too much, I am actually underestimating and not eating enough. and when you don’t eat enough your body stores it. Gah!  Oh well, with the new scale the problem is solved. Until I get back to properly portioning food on my own the scale it is.

Something I have been slacking on in the worst way is eating breakfast. So I have breakfast for the next few days in the oven now.  The only thing I will have to do is pop some in the microwave and grab a piece of fruit. Easy peasy! With the gloomy fall weather today pumpkin came to mind. Nothing says fall like pumpkin, and who doesn’t love pumpkin? After looking through the pantry Pumpkin Oatmeal Bake is what I came up with.

Here is the recipe:

2 cups pumpkin puree
1/2 cup honey
2 tablespoons molasses
2 large eggs
1/8 teaspoon ground cloves
1/2 teaspoon ground ginger
1/4 teaspoon nutmeg
1 teaspoon cinnamon
1/2 teaspoon salt
3/4 teaspoon baking powder
1 teaspoon vanilla
1 1/2 cups milk
1/2 cup greek yogurt
2 1/2 cups steel-cut oats
1 cup diced apples
1/2 cup chopped pecans
1 tsp coconut oil

1. Preheat oven to 350 degrees, Grease 8 x 8 baking dish with the coconut oil.
2. In a large bowl beat together the pumpkin, honey, molasses, eggs, spices, salt, baking powder, vanilla, milk and yogurt until smooth.
3. Add in oats and apples and mix until incorporated.
4. Put into greased pan, sprinkle pecans over the top of the mixture and cover with foil. bake for 35 minutes then uncover and bake for 20 minutes more.
Serves 8.

Bump and Some Randomness

What a week! I have kept pretty darn busy all week. Lots to do around the house, lots of company, made the cookies for the shower tomorrow (Emma lost interest so mom did it for her), and the list goes on!

Yesterday I had a bit of a scare. Emma’s school called and their opening was “Emma has had a bad playground accident.” Way to freak me out. Of course it wasn’t is bad as I thought it was at that instant. Let’s just say that her leg and neither region was assaulted by a bar. OUCH! We spent a lot of time icing and wrapping it so she would be good to go for her big Valentine’s Day Dance last night with Dad.

I better hit the hay. I am sure that our day of fun and excitement tomorrow will poop me out! Happy Saturday night everyone!

Apple Chips

Well I made the apple chips and my house still smalls amazing. I think making these is worth doing daily just to have the smell of baking apples and cinnamon in the house. Emma did not care for them, but I love them. So worth a try. Once again I got the recipe at Delighted Mama’s blog.

What you will need:

  • 2 apples
  • Cinnamon


  1. Remove apple core.
  2. Thinly slice the entire apple.
  3. Line a cookie sheet with parchment paper and place apple slices on it.
  4. Sprinkle with cinnamon.
  5. Bake at 275 degrees for two hours. At the end of hour one flip them over so they bake evenly.

I used green apples for mine and mine did not come out as pretty as her’s did. I would recommend them though 🙂 Super easy, two ingredients, healthy and they  make your house smell heavenly. what is not to like about this?!

Rainy Days are for…

It a thunderstorm and drizzle day here in Saginaw, MI. While most people complain about the weather I am enjoying. The day had a great start and it has been relaxing so far. Emma was sick all night and still has a bit of a fever, she is no longer acting sick though. how can a child have a fever and want to run amuck? I’d rather be in bed while sick. I intend on taking advantage of this rainy day. This is my to-do list.

  1. Watch as the fire truck birdhouse is painted
  2. Read
  3. Make apple chips (we have an abundance of apples) via a recipe I found on Pinterest
  4. Start getting things reorganized and clean up stairs
  5. Grill some short ribs (yes, I BBQ in the rain)
  6. Do dishes
  7. Maybe start my post for tomorrow (tutu tutorial)
  8. Les Mills Pump

I have two days left of my 30 day challenge. I am not happy with the lack of results over this 30 days. Darn plateau. I know it happened to everyone at some point. I just figured it would have been later than sooner. I did not gain in inches or pounds so I will still take that as a win. No point in beating myself up over it.

Emma ready for Swim

It is Friday night here in good old Saginaw, MI. It is not a big town so there usually isn’t anything new or interesting to do. (we did just get booted from the #1 spot of most violent city in the U.S.) You could go to the bar, or go to a different bar, or sit at someone’s house or.. well that’s about it. And as far as family activities we are null on that. So tonight we took Emma to her first swim lesson. She has always had this fear of swimming. Not a good thing when you live in the Great Lake State, everything in the warm months we do revolves around the woods and the water. They got her in and learning to swim in 5 minutes, I have been working on it for years with no luck. Kids are strange.

Next she decided she wanted hot dogs for dinner. Not something we usually eat but a processed food every so often won’t kill us, so we ran to the grocery store and picked up her dinner stuff. While at the store I asked her what we should make with dinner and she said tater tots. I did not know she ever had them. i know I have never given her any. She said she had them at a friend’s house. I forget that is “normal” kid food. I though about making them myself then decided to throw healthy(er) to the wind and buy bagged ones. I ate a couple and they were awesome.

After that it was decided that she would like to bake a cake so I have am angel food cake in the oven the kind that you take a box of sugar and fat-free angel food cake mix and mix it with a jar of no sugar added pie filling and bake it. No eggs, no water, nothing but mix and pie filling. Now we are sitting here and watching Disney Channel shows and waiting for the oven to beep. Little miss looks like she is ready to pass out. I see bedtime in her near future.

I can’t wait for bedtime. I bought some Lenny’s and can’t wait for more of the lemony goodness. I had one as soon as I got home. Can’t wait for another, maybe out in the backyard if the clouds clear up. It’s a warm 63 degrees out so it may be a good night to take the telescope out and pretend I am an Astronomer. I did save calories for beer. The one thing I can not give up is my beer. I pretty much eat totally clean minus the beer. Can’t do it. I love beer, especially microbrews/craft beer and premium imports. and the occasional home-brew. I need a new brew pot so I can make some more. Oh and don’t mind the beer cap collection jar, I save them for a friend who crafts with them. Her crafting depends on the beer consumed within my household. I swear. i think people only visit because we appreciate a tasty beer.

Why the Easter Bunny forgot the Reese’s Eggs..

Mom is weak, that is why. A basket full of Reese’s will undo everything I have been working for. The Bunny will not win, I banned the Reese’s Eggs. They are not allowed here. The kid can do without. You know what? She didn’t even notice because she was so spoiled with other things. That is a good thing because I could go through a pack of those bad boys in 60 seconds or less, and I am not talking one I am talking the ENTIRE freaking pack. Weight loss crisis adverted. Also, I want to know how a bunny can lay an egg, let alone an Egg so delicious that it could be the candy of the Gods?  I need to catch that Rabbit, he has to have some magical power that I could and should use in my favor. How can he not? Or at minimum I can use him to strike terror into thousands of little boys and girls. Have you ever noticed most kids look like they think they are going to be eaten alive in those Easter Bunny pictures us parents force them to sit through? I think kids are more afraid of the Easter Bunny than they are of Santa Clause.

So far Easter Sunday has been a success. I did not eat the candy and have not even had the slightest inclination too. All the eggs were found minus one that I obviously hid far too well. I am sure that one of the cats will find it and roll it about the house, then I will find it. I am pretty sure it is just jelly beans so I know it won’t start smelling funny or melt and seep out of the egg so I can just worry about it later. Emma did not seem to mind that one could not be found. She was too worried about getting on the Wii and playing with her new Skylanders that were left in her basket this morning. She of course just discovered this game and there are so many characters that are out of production and cost 4 to 10 times the original amount. Should of jumped on the bandwagon a while ago. I honestly did not even know this game existed until less than a week ago. This is going to be one expensive hobby. I am sure we can pacify her with the $10 in stock characters for now. the guy she really wants the most is no longer made and selling for 60 plus dollars on eBay. Ouch! Maybe one day, kid, maybe one day. This is another reward I can give her for completion of tasks and chores around the house.

I hope each and every one of you enjoys your Easter Sunday with Family and Friends. And all you other “dieters” out there try your best to be good! We can do this. I am making dessert to take so I know I can have some. I am making an Angel Food Cake with a No-Sugar Added Fruit Compote with light whipped topping. See, you can still behave and have your dessert!

Time to have a late breakfast and get my workout in before I get to making my cake. Can’t miss a day of Les Mills Pump.
